This recipe is a great way to get veggies in from the get go of your day!
Any vege you have e.g. mushrooms, courgette, broccoli, capsicum, onion, spinach.
2 x eggs
¼ cup milk
- Fry veggies in a fry pan in olive oil.
- Once mostly cooked, turn down the heat to low-medium.
- Lightly whisk eggs and milk in a mug, and pour over the veggies.
- Slowly cook egg and take off the heat once its scrambled.
- Serve with or without toast.
